Sustainability

 

We want the Steamie Bakehouse to be as sustainable as possible. We consider sustainability in every decision we make, and think that good environmental policy should also make good business sense. After all, lowering energy inputs and minimizing waste are sensible aims for business.

 

We have developed a super-efficient woodfired oven, which we fire with off-cuts from a local sawmill. We bake everything to order, and have developed software to manage the complexity of converting orders into recipe quantities. Our batches are always within one small loaf's worth of the required amount, even when we are dealing with tens of kilos of dough. We use exclusively organic flours and source all of our ingredients as locally as possible, either through a local wholesaler or by buying direct from producers. Our bakery aprons are of fairly organic cotton, and my bakery shoes are made by hand in the UK.
